Sausage & Tortellini Soup
Today, we're diving into the world of slow-cooked perfection with a savory twist – our Best Crockpot Sausage and Tortellini Soup.
Ingredients
- 1 lb cooked ground sausage for a lighter option I use ground chicken with 1.5TBSP of sausage seasoning
- 29 oz (2 cans) of diced tomatoes seasoned with basil garlic, and oregano
- 32 oz carton of reduced-sodium chicken broth
- 1.5 cups low fat cottage cheese blend first if you want it smooth
- 1.25 lbs tortellini found in the refrigerator section of the store, any flavor
- 3-4 cups baby spinach
Instructions
- To the crockpot add meat, tomatoes, broth, and cottage cheese
- Cook on High for 2 hours or low for 4
- Add tortellini and spinach, cover, and cook 30 more mins until tortellini is hot and spinach is wilted
