Instructions
Preheat oven to 400.
Blend 8 eggs with ¼ cup cottage cheese, salt & pepper.
Pour eggs into a parchment-lined and greased 8x8 baking dish.
Gently stir in spinach.
Bake for 18-20 mins on 400 until firm.
On a separate baking sheet bake 8 strips of turkey bacon for 18-20 mins.
Separate 4 English muffins onto individual sheets of parchment.
Once eggs are cooled, cut into 4 squares.
Assemble each sandwich with egg, bacon, and cheese between English muffins.
Wrap each sandwich in the parchment.
Place sandwiches in a zip-lock bag in the fridge (up to 4 days) or freezer and microwave when ready to eat.
Microwave Instructions
From fridge - microwave on high power 1 minute 15 seconds
From frozen - microwave on half power 3 minutes, 30 second
