Our Meal Prep Bacon, Egg, and Cheese English Muffins were created for efficiency and flavor. After a quick bake and assembly, wrap each sandwich in parchment and store them in the fridge for up to four days or in the freezer for future breakfast.
Ingredients for Meal Prep Bacon Egg and Cheese English Muffin
- 8 eggs
- ¼ cup cottage cheese
- Salt & pepper
- 2 cups baby spinach, washed & chopped (optional)
- 8 slices turkey bacon
- 4 English muffins
- 4 slices low-fat provolone cheese
Instructions
- Preheat oven to 400.
- Blend 8 eggs with ¼ cup cottage cheese, salt & pepper.
- Pour eggs into a parchment-lined and greased 8×8 baking dish.
- Gently stir in spinach.
- Bake for 18-20 mins on 400 until firm.
- On a separate baking sheet bake 8 strips of turkey bacon for 18-20 mins.
- Separate 4 English muffins onto individual sheets of parchment.
- Once eggs are cooled, cut into 4 squares.
- Assemble each sandwich with egg, bacon, and cheese between English muffins.
