Ingredients:
- 1.5 lbs pork tenderloin (unseasoned, usually comes 2 per pack)
- 2 TBSP olive oil
- 2 packets of dressing mix (Italian, Ranch, or a combination)
- 1 lb bag of carrots
- 3-4 potatoes

Trim the silverskin from each pork tenderloin. Slice into 1-inch medallions (they’ll resemble mini pork chops).
Step Two: Prep the Veggies
Wash and chop the carrots and potatoes into bite-size pieces.
Step Three: Season the Pork
Drizzle or spray 1 TBSP olive oil over the medallions. Coat each side with 1 packet of dressing mix.
Step Four: Season the Veggies
Place carrots and potatoes in a gallon-size zipper bag. Add 1 TBSP olive oil and 1 packet of dressing mix. Shake well to coat.
Step Five: Cook the Pork
- Grill or Cast Iron: Cook on medium-high heat, flipping once, until internal temp reaches 150°F.
- Air Fryer: Cook at 400°F for 10-12 minutes, flipping halfway through.

Pork Tenderloin
Ingredients
- 1.5 lbs Pork tenderloin I get them unseasoned and they come 2 in a pack
- 2 TBSP olive oil
- 2 packets of dressing mix Italian, Ranch, or a combination
- 1 lb bag of carrots
- 3-4 potatoes
Instructions
- Preheat oven, grill, cast iron, and/or air fryer depending on your preferred cooking method(s).
- Trim each pork tenderloin, removing the silverskin
- Cut each pork tenderloin into 1” slices to create mini pork chops
- Wash carrots and potatoes and cut into bite-size pieces
- Drizzle or spray the pork with 1TBSP of oil and coat on both sides with the dressing mix
- Add the potatoes and carrots to a gallon-size zipper bag
- Add 1TBSP of oil and 1 packet of dressing mix
- Shake to coat
- Cook the pork on the grill or in a cast iron pan on the stove. Flip once. Cook until an internal temp of 150 or until you start to see the juices coming to the surface of the meat.
- Allow meat to rest for 5 minutes
- Bake the potatoes and carrots in a 400 oven or air fryer until just tender
