This Easy BBQ Dinner is a cinch to put together, requiring just a few simple ingredients and a slow cooker. It’s the perfect meal for those busy days when you want something hearty and satisfying without spending hours in the kitchen.
Slow Cooker Magic
One of the best things about this recipe is that it’s made in the slow cooker. Simply place your boneless, skinless chicken thighs in the slow cooker, cover them with your favorite BBQ sauce, and a piece of foil. Add frozen corn on the cob on top of the foil and season. The chicken cooks low and slow on the bottom, becoming tender and infused with the smoky flavors of the BBQ sauce while the corn steams up top. Corn on the cob is the perfect accompaniment to the BBQ chicken, adding a sweet and savory element to the meal.
Ingredients for BBQ Chicken Dinner
- About 2lbs boneless, skinless chicken thighs
- 6 pack frozen corn on the cob
- 1 TBSP olive oil
- Salt to taste
- 1.5 cups of your favorite BBQ sauce (My favorite is Sweet Baby Rays & it’s Gluten Free)
- Bagged salad
- 2 Roma Tomatoes
- 1 Cucumber
- Butter and salad dressing for serving (optional)
Instructions
- Into your slow cooker add the chicken.
- Coat chicken on all sides with plenty of BBQ sauce.
- Cover with foil.
- Place frozen corn on top of the foil.
- Spray or drizzle with olive oil. Add salt.
- Cover and cook on HIGH for 3-4 hours or LOW 5-6 hours.
For Serving
- Cut the tomato and cucumber and add to the bagged salad.
- Top corn with butter.
- Top salad with dressing.
- Slice chicken and drizzle with sauce from the Crockpot.
