Slow Cooker Creamy Tuscan Chicken Pasta
My Slow Cooker Creamy Tuscan Chicken Pasta is not only incredibly flavorful but also simple to prepare, making it perfect for busy weeknights or lazy weekends.
Ingredients
- 1.5 - 2 lbs chicken breast
- 1 TBSP Italian seasoning
- 1 tsp onion powder
- 1 TBSP minced garlic
- ¼ tsp black pepper
- 3 oz sun-dried tomatoes, drained if necessary about 1 cup
- 1 cup low-sodium chicken broth
- ½ cup shredded parmesan cheese
- 8 oz block of cream cheese
- 3 cups baby spinach chopped
- 4.5 oz jar of sliced mushrooms drained
For Serving
- Protein pasta reserve pasta water
- Parmesan cheese
- Parsley
- Lemon
Instructions
- Add all ingredients except spinach and mushrooms to a slow cooker and cook on HIGH for 3.5 hours or LOW for 5-6 hours.
- 30 minutes before serving, prepare pasta and reserve 1 cup of pasta water.
- While the pasta is cooking, stir the chicken.
- Chicken should break apart easily.
- Stir in baby spinach and mushrooms.
- If the sauce is thick you can use up to 1 cup of reserved pasta water to achieve your desired consistency.
- Serve your Creamy Tuscan Chicken over the pasta and top with Parmesan cheese, parsley, and a squeeze of fresh lemon juice.
