There’s something truly comforting about a warm, hearty meal that fills your home with inviting aromas. This Slow Cooker Creamy Tuscan Chicken Pasta does just that, and more. With tender chicken, a creamy and flavorful sauce, and a generous helping of nutritious veggies, this dish is a true crowd-pleaser that will have your family coming back for seconds.

The Inspiration Behind the Recipe

As a busy mom with a need for quick dinner ideas, I’m always on the lookout for recipes that are not only delicious but also easy to prepare. This Creamy Tuscan Chicken Pasta is inspired by my love for comforting meals that can be made with minimal effort.  When creating my recipes I browse several similar recipes and then, invent my own recipe by adding the exact ingredients I know my family loves.  I also look for shortcuts and ways to make the recipe easy to prepare.  This includes simple ingredients, easy cooking methods, and minimal dishes.

Ingredients for Slow Cooker Creamy Tuscan Chicken Pasta

  • 1.5 – 2lbs chicken breast
  • 1 TBSP Italian seasoning
  • 1 tsp onion powder
  • 1 TBSP minced garlic
  • ¼ tsp black pepper
  • 3oz (about 1 cup) of sun-dried tomatoes, drained if necessary
  • 1 cup low-sodium chicken broth
  • ½ cup shredded parmesan cheese
  • 8oz block of cream cheese
  • 3 cups baby spinach, chopped
  • 4.5oz jar of sliced mushrooms, drained

For serving

  • Protein pasta (reserve pasta water)
  • Parmesan cheese
  • Parsley
  • lemon

Instructions

  1. Add all ingredients except spinach and mushrooms to a slow cooker and cook on HIGH for 3.5 hours or LOW for 5-6 hours.
  2. 30 minutes before serving, prepare pasta and reserve 1 cup of pasta water.  
  3. While the pasta is cooking, stir the chicken.  
  4. Chicken should break apart easily.  
  5. Stir in baby spinach and mushrooms.  
  6. If the sauce is thick you can use up to 1 cup of reserved pasta water to achieve your desired consistency.  
  7. Serve your Creamy Tuscan Chicken over the pasta and top with Parmesan cheese, parsley, and a squeeze of fresh lemon juice.

Tips for Making the Perfect Creamy Tuscan Chicken Pasta:

  • For best results, use a low-sodium chicken broth. There is plenty of sodium in the other ingredients so you won’t even miss the salt.  And, if you do, it is easy to add to your individual serving. 
  • Don’t be afraid to season generously. The Italian seasoning, garlic, and Parmesan cheese add a depth of flavor that is essential to this dish. Love garlic, throw in a little extra.  Want more cheese, that’s ok too.
  • If you’re short on time, you can cook the chicken on the stovetop instead of using the slow cooker. Simply sauté the chicken until cooked through, then add the remaining ingredients and simmer until heated through.

    This looks delicious and I’ll definitely be trying it this week!
    I notice that you set aside some pasta water on most pasta dishes to use as needed for thinning out sauces. Is there a reason why you use the pasta water as opposed to just regular water or other liquids?

      Hi Lisa, great question. I salt my water before adding the pasta. Once the pasta boils the water becomes salty and starchy and will offer a better flavor and texture than regular water.

    I made this last night and I have to say I can’t wait to make it again!! This meal is delicious!! I used chicken thighs instead of breasts because I had them on hand and for the other tweak I did, I used the oil from the jar of sun-dried tomatoes because of all the flavor in the oil. This is going to be a meal I make for friends and family, again, it is so good!! Thank you for sharing this recipe!!

    Hello! If I use frozen chicken should I adjust the cook time?

      It may take a little longer if you start from frozen. It really depends on how big the pieces are. Just keep an eye on it and when the chicken begins to shred easily you can add the mushrooms and spinach.
