Ingredients for Meatballs, Green Beans, and Potatoes
- 1 lb lean ground beef
- 1 lb ground Italian sausage
- 2 eggs
- ¼ cup Parmsean cheese
- 1 cup seasoned panko bread crumbs
- ¾ cup milk
- ½ tsp salt
- 2 tsp Italian seasoning
- 3-4 potatoes
- 12 oz bag of frozen fine green beans
- 1-2 TBSP olive oil
- Salt, pepper, garlic powder to taste
- Ketchup for serving
Instructions
- Preheat oven to 375
- In a large bowl add milk and breadcrumbs and set aside
- Wash and dice potatoes
- Onto a baking sheet, place the potatoes and green beans in a single layer
- Spray or drizzle with olive oil and season with salt, pepper, and garlic powder
- Toss to coat
- In the large bowl with the soaked breadcrumbs, add beef, sausage, eggs, cheese, salt and Italian seasoning
- Mix well to combine, form large meatballs, and place on a lined baking sheet
- Bake everything for 35 minutes
- Serve with ketchup

@injamieskitchen Grandma passed away when I was very young. Mom would make this and called it Meatballs, Green Beans, and Potatoes. I’m not sure about Grandma’s exact recipe for the meatballs but this is how I’ve been making them and Aaron and Danny have given their stamp of approval.
