However, with this Peanut Butter Protein Ice Cream, you can enjoy the flavor of peanut butter without the guilt. Ingredients for Peanut Butter Protein Ice Cream

Ice cream

  • 1 ½ cups ice cubes
  • ½ frozen banana
  • 1 scoop of protein powder (I used a chocolate peanut butter flavor but vanilla or chocolate works too).
  • 2 TBSP powdered peanut butter
  • ⅓ cup unsweetened almond milk

Chocolate Shell

  • 1 TBSP mini chocolate chips
  • 1 tsp coconut oil

Instructions

Ice Cream

  1. Combine all ingredients into a high-powered blender or food processor. *The mixture will be thick but it should blend together to reveal a soft serve ice cream texture without further freezing

Chocolate Shell

  1. Combine the chocolate chips and coconut oil.  Microwave on high for 1 minute stirring every 15 seconds until melted and smooth.  
  2. Pour the chocolate over the ice cream and watch as the chocolate transforms into a hard shell within seconds.
