Very Berry Waffles
An Easy Waffle Recipe
Looking for an easy waffle recipe that will brighten up your breakfast or brunch table? Look no further than these Very Berry Waffles! What sets these waffles apart are the delicious toppings: creamy yogurt and a homemade very berry syrup that is as easy to make as it is tasty.
Making the Waffles
To start, I followed the basic waffle recipe on the back of the Bisquick box. This is an easy waffle recipe to whip up and the box says it makes 8 waffles. However, since I only wanted to make 4 waffles, I halved the recipe. To my surprise, the halved recipe only yielded 3 slightly skimpy waffles, as you can see in the picture below.
When making your own waffles, don’t forget to grease your waffle iron. I find using an oil sprayer works wonderfully for this step.
The Very Berry Syrup
Now, onto the star of the show – the very berry syrup! In a pot over medium-high heat, combine 1/4 cup of maple syrup with 1 cup of frozen mixed berries. Allow the mixture to simmer, stirring occasionally, for about 3 minutes or until the berries begin to soften. Then, use a Mix N Chop or a potato masher to gently mash the berries, creating a deliciously chunky syrup.
Ingredients for Very Berry Waffles
Waffle Mix made according to package directions… I used:
- 1 cup Bisquick
- 1 egg
- 1 TBSP vegetable oil
- 1/2 cup milk
Berry Topping
- 1 cup frozen mixed berries
- ΒΌ cup maple syrup
For Serving
- 1 small container of vanilla yogurt
- Strawberry protein powder (optional)
Instructions
- Preheat waffle iron
- Prepare waffles according to package instructions
- Spray waffle iron with oil
- Pour batter onto waffle iron and cook until waffles begin to brown
- While waffles are cooking heat syrup and berries in a pot over medium high heat stirring occasionally
- After about 3 minutes (or once the berries start to soften) use Mix N Chop or potato masher to mash berries
- If using protein powder, mix yogurt and powder together until smooth
- To serve top waffles with yogurt and drizzle with syrup
