Ingredients for Best Damn Cornbread
- 2 eggs
- 2TBSP vegetable oil
- 2 cups cornmeal flour
- 1 can cream-style corn
- ½ cup milk
- 2 TBSP honey
- ½ cup plain Greek yogurt (or sour cream)
- Butter for serving
Instructions
- Preheat oven to 350
- Butter cast iron skillet
- In a bowl whisk together the eggs and oil
- Add in the remaining ingredients and stir until just combined, don’t over-mix
- Pour mixture into prepared cast iron
- Bake for 40 mins
- Remove from oven, top with butter, serve warm

What do you mean by cornmeal flour?
Hi Patty. Thanks for the question. It should be self-rising corn meal mix. I just updated the ingredients.
Skillet size – what is the best sized cast iron skillet to use? I used a 9 inch and my corn bread came out very heavy and hard. I followed the ingredients exactly (I say that because sometimes I change it up a little) Then usually corn bread is so good the next day, mine was so hard and heavy tasting that I threw it away. I loved the first taste. And hubby thought it had a great taste but after it cooled off, it was pretty much un-eatible. Any suggestions or advice would be very much appreciated. I want to try this one again because it looks and first bite tasted amazing. Thank you for sharing so many wonderful recipes
Hi Carrie. I’m glad you liked the flavor. My first thought is could the batter have been over-mixed? Be sure to only mix until just combined. I think my cast iron is a 9″ as well.
I had the ingredients on hand and we needed cornbread! My husband and I both really liked it. I used a square dark coated cake pan and about 40 mins was just right! Thanks!
