Ingredients for Cabbage Soup
- 1 package of lean ground beef
- 1 onion, chopped (grab my favorite Chopper)
- 3 tsp minced garlic
- 1 tsp salt
- 1/2 tsp pepper
- 1.5 tsp paprika
- 1/2 tsp thyme
- 1 24oz can petite diced tomatoes
- 1 Carton of beef stock
- 1 14oz bag of cole slaw (or chop a head of cabbage)
- Rice (optional)
Instructions
- In a big pot (I like to use my Dutch Oven for soups), Brown the ground beef with the onion. Drain.
- Add in the seasonings and stir. Add in everything else, stir, and bring to a boil. Cover. Simmer for 35 minutes.
- Add rice if desired.
- Enjoy!

I really like the frozen microwaveable rice from Trader Joe’s. Leftover rice would be perfect too. I’ve never tried adding uncooked rice before.

Hi, I just saw this video. I’ll be making this ASAP. When adding rice, how much do I add? Thank you. I can’t wait to try this!
If you want to add rice, I usually start with about 1 cup of cooked rice and stir it in right at the end. You can add more or less depending on how hearty you like your soup. If you only have uncooked rice, I recommend cooking it separately first so it doesn’t absorb all the broth.
This was so good. I loved that I had enough for lunch for a few days. I only had one bag of cole slaw mix and it was fine. I used boil in back rice and I put it in at the end like you said. Would definitely make this again and use 2 bags of cole slaw mix from Target. Thank you!

I have a 12 year-old granddaughter who has never liked any soup EVER! I made this for the first time last month and was planning on making something different for her. When she walked in the door after school, she asked “what is that delicious smell”? I told her it’s cabbage soup. She agreed to taste it and she LOVED it!
