Ingredients for Cheesy Chicken Enchilada Dip
- 2 Chicken Breasts (about 1 pound total)
- 15 oz jar of enchilada sauce
- 16 oz jar of salsa
- 8 oz block cheddar cheese
- 4 oz reduced-fat cream cheese
- 16 oz container of low-fat cottage cheese
- 2 TBSP nutritional yeast
- 2 TBSP minced garlic
- 3 bell peppers
- 2 small or 1 large onion
- 1 tsp olive oil
- Salt, pepper, and garlic powder to taste
Instructions
- Add chicken, enchilada sauce, and salsa to the slow-cooker and cook on high for 3 hours.
- Meanwhile, dice and roast peppers and onions until tender and slightly charred.
- In a blender, combine cottage cheese with nutritional yeast and garlic until smooth.
- Grate cheddar cheese using a rotary cheese grater.
- Shred the cooked chicken, then add the cottage cheese mixture, cheddar cheese, roasted veggies, and half a block of reduced-fat cream cheese.
- Stir well and cook for an additional hour until heated through and bubbly.
- Serve warm with whole-grain scoops chips for dipping.

- Grate the cheddar cheese
- Blend cottage cheese, nutritional yeast, and garlic for 30 seconds or until smooth
- After 3 hours, shred the chicken then add the vegetables, cream cheese, cheddar cheese, and cottage cheese mixture to the slow-cooker.
- Stir well, cover, cook on high for 1 hour
- Serve with your favorite whole-grain chips

Can I leave the yeast out?? What is the reason for adding it ???
It gives a cheesy taste and adds protein. I think it will be ok if you leave it out.
