Ingredients for Garlic Parmesan Chicken Skewers

Meat

  • 1.5 – 2 lbs boneless, skinless chicken thighs

Marinade

  • ½ cup shredded parmesan cheese
  • 2 tsp onion powder
  • 1 tsp oregano
  • ½ tsp red pepper flakes
  • 3-4 cloves of minced garlic
  • ½ tsp salt
  • ¼ tsp pepper
  • 3 TBSP honey
  • ½ cup olive oil
  • Juice of 1 lemon

Butter Topping

  • 3 TBSP butter
  • ¼ cup parmesan cheese
  • 2 cloves of minced garlic
  • 1 TBSP honey

Instructions

  1. If using wooden skewers, begin by soaking them in water
  2. Cut chicken into bite-size pieces
  3. Mix together ingredients for marinade
  4. Place chicken and marinade in a gallon-size zipper bag or a large bowl and mix to coat the chicken
  5. Allow the chicken to marinate for at least 30 minutes  (up to several hours)
  6. Remove skewers from water
  7. Place chicken on skewers
  8. Grill over indirect heat with the lid closed for 20-25 minutes or until internal temp of 160, turning every 5 minutes
  9. Mix ingredients for the garlic parmesan butter
  10. Brush butter onto chicken a few minutes before removing from the grill
  11. Allow chicken to rest for a few minutes before serving
