While the egg noodles are cooking, I sauté a mixture of frozen vegetables in butter until they’re tender-crisp. Then, I add in the drained tuna, cream of chicken soup, milk, and black pepper, stirring everything together until it’s well combined. Once the noodles are done, I add them to the pot and mix everything together, creating a creamy and flavorful base for the casserole.

Ingredients for Tuna Noodle Casserole
- 12 oz package of wide egg noodles
- (4) 5oz cans of chunk light tuna packed in water, drained
- 3 TBSP butter
- 12 oz bag of frozen mixed vegetables (peas, carrots, corn)
- ½ tsp black pepper
- 2 cans of cream of chicken soup
- 1 cup of milk
- 1 cup of shredded mozzarella cheese
- 14 Ritz crackers, crushed
- 2 tsp olive oil
Instructions
- Preheat oven to 350
- Boil pasta in salted water for 1 minute less than package directions, drain
- In a separate pot melt the butter
- Add vegetables and saute for about 4 minutes
- Turn off the heat
- Add tuna, soup, milk, and pepper
- Stir to combine then stir in the pasta
- Pour casserole into a dish
- Top with mozzarella cheese and Ritz crackers
- Spray or drizzle with oil
- Bake for 25 minutes then broil on high for 2 minutes until the top begins to brown
