Easy Whipped Ricotta with Hot Honey & Pistachios

Why This Whipped Ricotta with Hot Honey Will Be Your New Favorite Appetizer

Danny and I recently ordered a whipped ricotta appetizer at one of our favorite local restaurants, and from the very first bite, I knew I had to recreate it at home. Their version was beautifully simple with creamy whipped ricotta, honey, and crunchy pistachios served alongside warm focaccia bread. It reminded me that sometimes the best appetizers don’t need a long list of ingredients to be memorable.

When I got home, I decided to give it my own twist. Instead of regular honey, I reached for Mike’s Hot Honey, which adds just the right amount of sweet heat without overpowering the creamy ricotta. I also finished it with fresh thyme for a pop of color and fresh flavor. Served with toasted sourdough, naan dippers, or your favorite crackers, it’s the kind of appetizer that looks impressive but couldn’t be easier to make.

Ingredients You’ll Need

One of my favorite things about this recipe is that it only takes a handful of simple ingredients, but together they create an appetizer that feels restaurant worthy. Here’s what you’ll need:

Whole Milk Ricotta Cheese

The ricotta is the star of the show, so I recommend using whole milk ricotta for the creamiest texture. I used one 32-ounce container, which makes enough to serve about 8 to 10 people as an appetizer.

Mike’s Hot Honey

Instead of regular honey, I gave this recipe my own twist by using Mike’s Hot Honey. It adds a subtle kick of heat that pairs perfectly with the creamy ricotta. If you prefer a milder flavor, regular honey works just as well.

Shelled Pistachios

Save yourself a little time and buy shelled pistachios. Give them a rough chop so you get a little crunch in every bite. There’s no need to chop them perfectly—the rustic look is part of the charm.

Fresh Thyme

A sprinkle of fresh thyme adds beautiful color and a fresh, earthy flavor that complements both the honey and the ricotta. It also makes the finished appetizer look extra special.

Bread for Serving

You have lots of options here! I used a bake-at-home sourdough baguette because that’s what my grocery store had available, but don’t feel limited.

Some of my favorite options include:

  • Sourdough baguette
  • French bread
  • Focaccia
  • Ciabatta
  • Crostini
  • Naan dippers
  • Pita chips
  • Your favorite crackers
  • Crunchy, raw veggies

For my serving board, I actually included both toasted sourdough and naan dippers so guests could choose between a crispy and a softer option.

Olive Oil & Butter

I used a little olive oil while whipping the ricotta to make it extra silky. I also brushed some of my bread with olive oil before grilling it on a cast iron grill pan.

The rest of the bread was lightly buttered, broiled until golden brown, and sprinkled with garlic flaky salt for even more flavor.

Jamie’s Tip

Don’t worry about buying the “perfect” loaf of bread. This recipe is incredibly forgiving, and almost any sturdy bread, cracker, or chip will pair beautifully with the creamy whipped ricotta. Use what you love—or what you already have on hand!

Whip the Ricotta Until It’s Light and Fluffy

Start by adding the ricotta to the bowl of your stand mixer. If you’d like an even silkier texture, drizzle in a little olive oil before whipping. Turn the mixer on medium-high speed and let it work its magic for about five minutes. You’ll notice the ricotta becomes smoother, lighter, and almost cloud-like in texture.

While the ricotta is whipping, it’s the perfect time to get your bread ready.

The Bread Is Just as Important

One of the things I love about this appetizer is how flexible it is. My grocery store didn’t have the artisan loaf I originally wanted, so I picked up a bake-at-home sourdough baguette instead—and honestly, it turned out beautifully. It just goes to show that you don’t need the “perfect” loaf to make an incredible appetizer.

I sliced the baguette into bite-sized pieces and prepared it two different ways.

Some of the slices were lightly brushed with olive oil before being toasted on my cast iron grill pan until they developed beautiful golden grill marks.

The remaining slices were spread with butter, placed under the broiler for just a few minutes, and then sprinkled with a garlic salt while they were still warm.

If you don’t have a baguette, don’t overthink it. French bread, ciabatta, crostini, crackers, pita chips, or naan dippers are all delicious with whipped ricotta. I even added a package of naan dippers to my board for a softer option alongside the crusty sourdough.

Finish It with the Toppings

Once the ricotta is nice and fluffy, spread it into a shallow serving bowl. Use the back of a spoon to create a few swirls. Those little grooves are perfect for catching all of the toppings.

I roughly chopped a handful of pistachios and sprinkled them over the ricotta before drizzling everything generously with Mike’s Hot Honey. If you’ve never tried Mike’s Hot Honey before, it’s one of my favorite pantry staples. It adds just the right balance of sweetness with a gentle kick of heat, and it pairs perfectly with creamy cheeses.

Finish everything off with a few fresh thyme leaves, and your appetizer is ready to serve.

Build a Beautiful Grazing Board

The whipped ricotta is absolutely the star of this recipe, but it’s also a wonderful starting point for an easy grazing board.

I arranged the toasted sourdough, naan dippers, folded salami, and a handful of fresh grapes around the bowl. Then I scattered a few extra chopped pistachios, fresh thyme sprigs, and set out a little more Mike’s Hot Honey so guests could add extra toppings as they enjoyed the appetizer.

The beauty of this recipe is that you can make it as simple or as elaborate as you’d like. If you’re serving a casual weeknight snack, a bowl of whipped ricotta with a toasted baguette is more than enough. If you’re entertaining friends or family, add a few meats, fruit, crackers, or olives, and suddenly you’ve created a beautiful centerpiece that looks like you spent hours putting it together.

Ingredients
  

For the Whipped Ricotta

  • 32 ounces whole milk ricotta cheese
  • 2 teaspoons olive oil optional, for a smoother texture

For Serving

  • 1 sourdough baguette or your favorite crusty bread
  • Olive oil or softened butter for brushing the bread
  • Garlic flaky salt to taste
  • Hot honey for drizzling
  • ½ cup shelled pistachios roughly chopped
  • Fresh thyme leaves
  • Naan dippers or pita chips optional
  • Folded salami grapes, or other charcuterie favorites (optional)

Instructions
 

Step 1: Whip the Ricotta

  • Drain any excess liquid from the ricotta if needed. Add the ricotta to the bowl of a stand mixer fitted with the whisk attachment. If desired, add the olive oil for an even creamier texture.
  • Whip on medium-high speed for about 5 minutes, or until the ricotta becomes smooth, light, and fluffy.

Step 2: Toast the Bread

  • Slice the baguette into ½-inch slices.
  • For grilled bread, lightly brush the slices with olive oil and toast them on a hot grill pan or cast iron skillet until golden with grill marks.
  • For garlic toast, spread the slices lightly with butter, place them under the broiler for a few minutes until golden brown, then sprinkle with garlic flaky salt while they’re still warm.

Step 3: Assemble

  • Spread the whipped ricotta into a shallow serving bowl, creating soft swirls with the back of a spoon.
  • Top with:
  • chopped pistachios
  • a generous drizzle of hot honey
  • fresh thyme leaves

Step 4: Build the Board

  • Arrange the toasted bread, naan dippers, or pita chips around the whipped ricotta.
  • For an easy entertaining board, add extra chopped pistachios, fresh thyme, and hot honey nearby so guests can add more toppings as they enjoy the dip. Add folded salami, grapes, or your favorite charcuterie items to fill out the board if desired.
  • Serve immediately.

Notes

  • Whole milk ricotta produces the creamiest texture.
  • A stand mixer with the whisk attachment creates an incredibly light, fluffy consistency in just a few minutes.
  • No sourdough? French bread, ciabatta, crostini, crackers, pita chips, or naan dippers all work beautifully.
  • This recipe serves 8 to 10 people as an appetizer, depending on what else you’re serving and the size of your appetizer board.
  • Leftover whipped ricotta can be refrigerated in an airtight container for up to 3 days. Stir before serving again.
