Ingredients for Taco Soup
- 2-3 chicken breasts
- 28oz can diced tomatoes
- 1 carton of chicken broth
- ¼ cup taco seasoning
- 1 can corn, drained
- 1 can black beans, drained
- 1 cup heavy cream
Optional Toppings
- Cilantro
- Yogurt or sour cream
- Avocado
- Tortilla chips
- Cheese,
- Hot sauce
Instructions
- Into your pressure cooker add tomatoes, broth and seasoning, and stir
- Add chicken
- Pressure cook on high for 30 minutes
- Release steam and shred chicken
- Add corn, black beans, and cream
- Serve once beans and corn are warm
- Top as desired

Any alternative suggestion for the heavy cream?
I’ve used blended cottage cheese in other soups. That would probably work just fine.
Leave it out, or use a lower fat milk, even an almond milk. Personally, I’d leave out the cream/
