My Taco Soup recipe is a celebration of bold flavors and convenience, making it the ideal solution for busy days when you need a hearty meal without compromising on taste. Harness the power of your pressure cooker (I have the Ninja Foodi) and win over your family’s hunger in a hurry.

Ingredients for Taco Soup

  • 2-3 chicken breasts 
  • 28oz can diced tomatoes
  • 1 carton of chicken broth
  • ¼ cup taco seasoning
  • 1 can corn, drained
  • 1 can black beans, drained
  • 1 cup heavy cream

Optional Toppings

  • Cilantro
  • Yogurt or sour cream
  • Avocado
  • Tortilla chips
  • Cheese,
  • Hot sauce

Instructions

  1. Into your pressure cooker add tomatoes, broth and seasoning, and stir
  2. Add chicken
  3. Pressure cook on high for 30 minutes
  4. Release steam and shred chicken
  5. Add corn, black beans, and cream
  6. Serve once beans and corn are warm
  7. Top as desired

    Any alternative suggestion for the heavy cream?

      I’ve used blended cottage cheese in other soups. That would probably work just fine.

      Leave it out, or use a lower fat milk, even an almond milk. Personally, I’d leave out the cream/
