This dish is a deconstructed take on the classic, featuring sautéed bell peppers, onions, riced cauliflower, and seasoned ground turkey topped with melty cheddar cheese. It’s incredibly easy to make and packed with veggies, yet it doesn’t taste like a healthy dish at all. Even my picky 10 year old loves it.
One of the best parts about this recipe is how it simplifies the cooking process. Traditional stuffed peppers require hollowing out the peppers, carefully stuffing them with a filling, and then baking them. This can be time-consuming and tricky to get just right. Ingredients for Unstuffed Peppers
- 1TBSP olive oil
- 2 bell peppers, diced
- 1 onion, diced
- 1lb ground turkey
- 1TBSP minced garlic
- 1.5TBSP Italian seasoning
- 1/2 tsp paprika
- 1 tsp salt
- 16.5 oz bag frozen riced cauliflower
- 15 oz can diced tomatoes
- 8 oz can tomato sauce
- 1 cup shredded cheddar for top
Optional toppings:
- Plain Greek yogurt

I love using two different colors of bell peppers to ensure a vibrant, colorful dish. The combination of green, red, yellow, or orange peppers not only adds visual appeal but also a variety of flavors. The riced cauliflower blends seamlessly with the ground turkey, providing a nutritious base that soaks up all the savory seasonings. And let’s not forget the cheddar cheese, which melts beautifully over the top, adding a rich, comforting finish to the dish.
Instructions
- Start out by dicing the peppers and onions. I love using my chopper for this step.
- Heat pan over medium heat
- Add oil

- Crumble the turkey as it cooks

- Stir in the cauliflower

Would rice work instead if cauliflower, especially if I don’t have riced cauliflower on hand?
Yes. I have used microwave rice before and it worked well. It needs to be cooked rice.
