Mama’s Baked Mac & Cheese, a Classic Staple

This Old Fashioned Baked Macaroni and Cheese has a story that dates back to my early kitchen adventures. I stumbled upon it in one of those treasured old cookbooks schools used to publish for fundraisers. The cookbook, a compilation of recipes from parents, became a culinary treasure trove. My mom acquired it from my brother’s school, and as I ventured out on my own, this cookbook found its way into my kitchen.

The recipe for Mama’s Baked Mac and Cheese quickly became a staple in my kitchen. Its simplicity and heartiness made it a fast favorite, and I soon found myself making it so often that I committed it to memory. As a parent, it brings me immense joy to know my kids have grown up with a love for this classic dish and continue to request it when they come home.

Ingredients for Mama’s Baked Mac & Cheese

  • 16oz box large macaroni noodles
  • 4 TBSP butter
  • 4 TBSP flour
  • 16oz (4 cups) shredded sharp cheddar cheese
  • 2 cups milk
  • black pepper

Instructions

  1. Preheat oven to 350
  2. Cook pasta 2 minutes less than package directions, drain
  3. In the same pot melt the butter over medium heat and then add the flour to make a roux. Cook for about one minute until smooth
  4. Whisk in the milk and cook until the milk warms and begins to thicken.
  5. Add the cheese and pepper and stir occasionally until the cheese is completely melted and smooth
  6. Stir in the pasta and transfer to a casserole dish
  7. Bake for 15-20 minutes until the top begins to crisp and the edges are bubbly

    I add a little dry mustard to the roux and cover the top with seasoned bread crumbs with dots of butter.

      I’ll be trying this recipe this weekend. My father used to make the best and I miss it so much. He too added the bread crumbs on top and turned on broiler for a minute or so. Delicious. Can’t wait to try this one.
