- 3–4 pounds baby potatoes (any kind you like)
- 1 large onion, chopped
- 1 teaspoon salt
- 1 teaspoon black pepper

- 12–16 ounces Cajun-style smoked sausage, sliced

- 12 ounces fine, frozen green beans
- 1 packet onion soup mix
- ¾ stick butter
- Optional: Hot sauce, for serving

Step One: Prep
Wash and cut potatoes. No peeling needed! Add to the Crockpot.
Step Two: Add the Onion
Chop one onion and toss it right on top.
Step Three: Season Everything
Sprinkle with salt, pepper, and Cajun seasoning. Make it as spicy or mild as you want.
Step Four: Add the Sausage
Slice your Cajun-style smoked sausage and tuck the pieces down into the potatoes.

Step Five: Add the Green Beans
Pour the bag of frozen green beans on top of the sausage
Step Six: Onion Soup Mix
Sprinkle the packet evenly over the top.
Step Seven: Butter Time
Add your butter right on top.
Step Eight: Cover & Cook
Put the lid on (cram it down if needed 😅).
Cook on HIGH for 4–5 hours or LOW for 6–7 hours, until the potatoes are tender and everything is smothered in that buttery, savory goodness.
Step Nine: Serve
