Coated in a flavorful mixture of almond flour, Parmesan cheese, and zesty seasonings, these almond crusted chicken tenders are perfect for a quick weeknight meal or an elevated dinner party dish. Plus, this recipe is gluten-free and packed with protein, making it a fantastic choice for those looking to maintain a healthy lifestyle without sacrificing flavor.
A few years ago, a trend swept across social media showing how to remove the tendon from chicken tenderloins using a fork. While clever in theory, I found the process slippery and tedious. After struggling through multiple attempts, a follower suggested I try a catfish skinner, and let me tell you, it’s a game-changer! This nifty gadget makes quick work of the task, saving time and frustration. I’ve linked the one I use here. Trust me, it’s worth adding to your kitchen tool collection.

With its high protein content and wholesome ingredients, this dish checks all the boxes for a healthy chicken dinner. To create a balanced meal, serve these chicken tenders with steamed vegetables like broccoli or my famous green beans and a fiber-rich carb such as quinoa, sweet potatoes, or brown rice. How to Make Almond Crusted Chicken
*printable recipe card is available at the bottom of this page
Step One: Preheat the Oven
Preheat your oven to 385°F (195°C).
Step Two: Prepare the Coatings
In a shallow bowl, mix together the almond flour, Parmesan cheese, garlic powder, onion powder, salt, pepper, and lemon zest.
In a separate bowl, whisk the eggs and lemon juice to create the egg wash.
Step Three: Coat the Chicken
Dip each chicken tenderloin into the egg wash, ensuring it’s fully coated. Then dredge it in the almond flour mixture, pressing gently to adhere the crust.
Step Four: Cook the Chicken
- Heat olive oil in a large skillet over medium heat.
- Brown the coated chicken in batches, cooking each side for about 2–3 minutes or until golden. Be careful not to overcrowd the pan.
Step Five: Finish in the Oven
If you’re using an oven-safe skillet (this is my favorite because it’s big, metal utensil friendly, oven-safe and dish-washer safe) , you can immediately pop the chicken into the preheated oven. If your skillet is not oven-safe, transfer the chicken to a a baking sheet. Bake for 10–12 minutes or until the internal temperature reaches 165°F (74°C).
Step Six: Garnish and Serve
Drizzle the chicken with fresh lemon juice and sprinkle with parsley. Serve with lemon wedges on the side.
Tips for the Perfect Almond Crusted Chicken
- Make It Crunchier: For extra crispiness, toast the almond flour in a dry skillet for 2–3 minutes before mixing it with the other crust ingredients.
- Dairy-Free Option: Skip the Parmesan cheese for a completely dairy-free version. You’ll still have a deliciously nutty crust.
- Meal Prep-Friendly: This recipe reheats beautifully, making it an excellent choice for lunch or dinner meal prep.
