Sausage Breakfast Casserole

This breakfast recipe takes the traditional sausage delight to the next level by adding eggs, peppers, onion, and shredded cheese, creating a flavorful and hearty sausage breakfast casserole that’s perfect for holiday gatherings or any morning when you want to treat yourself.
Preparation Tips:
You can make this breakfast recipe the morning of, or prepare ahead for convenience. To prep ahead, cook and prep the peppers, onions, cream cheese, and sausage mixture, and store it in the fridge until you’re ready to assemble. Just remember to set the mixture out to soften before assembling your Ultimate Sausage Delight. You can also assemble the entire sausage breakfast casserole, cover, and store it in the fridge until ready to bake. Keep in mind that cooking times may vary depending on the temperature of your ingredients when you put them into the oven. Another meal prep option is to assemble and cook your Ultimate Sausage Delight, then re-warm the entire dish in the oven or individual pieces in the microwave or air fryer.
Ingredients for Ultimate Sausage Delight
- 2 cans crescent rolls (get the sheets If you can)
- 1lb sausage
- 1 bell pepper, diced
- 1 medium onion, diced
- 8oz cream cheese, softened
- 8 eggs
- 1 tbsp ground mustard
- 1/2 cup heavy cream
- salt & pepper
- 1 cup shredded cheese
Instructions
- Preheat oven to 350.
- Spray bottom of 9×13 pan with oil.
- Spread 1 can of crescent rolls on bottom of pan, pinching together seams (if you have the sheets you can skip this part).
- Bake for 8-9 minutes.
- In a skillet cook peppers, onions and sausage until veggies are tender and meat is no longer pink. Drain.
- Combine cooked sausage and veggies with the cream cheese and spread over baked crescent crust.
- In a separate bowl whisk together eggs (reserve half of one egg for egg wash), mustard, cream, salt & pepper
- Pour eggs over sausage and top with shredded cheese
- Spread second can of crescents over the top, pinching at seams.
- Brush top with reserved egg.
- Cover with foil and bake for 30 minutes.
- Uncover and bake and additional 25 mins or until golden.
